WHERE TO STAY: THE BYRON AT BYRON
Byron Bay is the perfect combination of trendy surf town and tropical getaway. But if you’re edging more on the tropical getaway side, there’s no better place to stay than The Byron at Byron. A resort tucked into the middle of the rainforest, the hotel grounds are made up of bamboo boardwalks that meander through the forest. The hotel suites are walled with mesh screens, so you have the option of leaving all the doors open and feeling like you’re in the middle of the forest. We fell asleep to the sound of frogs croaking in the nearby river, and woke up to songbirds outside our window. With a full kitchen, washer and dryer, sundeck, and massive soaking tub, our room quickly felt like home. So whether you’re doing morning yoga, getting a massage in the rainforest, or taking a stroll down to the private beach, The Byron at Byron is an ideal getaway.
For a vacation town, I was actually surprised to find so many good restaurants. St. Elmo serves up modern tapas and creative cocktails in a contemporary setting. While Fleet offers a fine dining tasting menu in an intimate 22-seat space. For breakfast and lunch, definitely head to Three Blue Ducks at “The Farm.” A few glasses of house wine on tap and organic, high quality Australian food overlooking the farm’s green pastures.
